Recipe from Cambodia: Glutinous rice cake with jackfruit

Ingredients (Serves four)

  • One ripe jackfruit, finely chopped

  • Two hundred grams of rice

  • A quarter of a litre of fluid coconut milk and coconut cream

  • Four tablespoons sugar

  • A pinch of salt

Preparation

  • Soak the rice in lukewarm water for two hours and drain.

  • Steam the rice for thirty minutes

  • In a bowl, pour the rice mixed with the coconut milk, sugar and salt

  • Pour into four bowls and leave to cool

  • Scatter over the chopped jackfruit

  • Add the coconut cream and serve cold
