Recipe from Cambodia: Crispy fried prawns

A quick and easy recipe for one of the favourite snacks of many Cambodians, thanks to the crispy texture of the prawns and the lime sauce that goes with them.

Ingredients for the pastry

  • 200 grams of small prawns

  • 100 grams rice flour

  • ½ teaspoon baking powder

  • ½ teaspoon salt

  • 150 ml water

  • 1 egg

Ingredients for the sauce

  • 1 teaspoon salt

  • ½ teaspoon sugar

  • 1 teaspoon black pepper

  • 1 lime

Preparation

  • In a bowl, mix the salt, sugar and black pepper and set aside

  • In another bowl, combine the rice flour, baking powder and salt and mix well

  • Break an egg, beat it and add it to the flour mixture

  • Gradually pour the water into the mixture while stirring until the dough becomes fine.

  • Add the prawns to the batter

  • On the cooker over a medium heat, pour some cooking oil into the pan, take a tablespoon of the prawn batter and fry in the pan

  • Cook each side for 30 seconds until golden brown
