On 21 November 2024, the Topaz restaurant will welcome chef Didier Corlou, whose culinary career is superbly intertwined with Brittany and the South-East Asian culinary scene.

Didier's Breton roots and his passion for the flavours of Southeast Asia have inspired a menu that explores the links between land and sea, finely blending French and Cambodian influences.

According to Arnaud Darc, “I am delighted to share a moment that is particularly close to my heart. On 21 November, at Topaz, we will be lucky enough to welcome Didier Corlou, a chef and mentor whom I know well. When I arrived in Cambodia in 1994, it was he who taught me the ropes of management control in the kitchens of the big hotels. Like my father Alain Darc, he showed me the importance of passion and authenticity in every dish”.

"For this evening, Didier has concocted a menu inspired by his Breton roots and his love of Cambodian produce. Each dish tells a story, a fusion of land and sea that recalls his unique journey”.

Didier has created a unique menu for this special occasion:

  • Oysters Perle Noire de la Rivière de Belon with a Gustave Lorentz, Crémant d'Alsace NV, France

  • Balantine of Fresh Duck Foie Gras and Lobster with tangy green apples and a Château de Mercuès ‘Chenin de Mercuès’ Blanc Moelleux

  • Lobster-flavoured Escabèche Océane Royale with a Saint-M Rosé by Château Saint-Maur 2023, Rhône, France

  • Koh Trong Grapefruit Sorbet with 43% Sampan Rum

  • Australian Parsley Beef and Lobster in Yin and Yang, Cadoret Oyster Sauce with a Domaine Michel Juillot, Mercurey 1er Cru ‘Clos des Barraults’ 2022, Burgundy, France

  • A selection of home-matured cheeses with Domaine Saint-Etienne ‘Les Abelhas’, Côtes-du-Rhône 2022, Rhône, France

  • Soft Red Fruit Cake, Black Sesame Ice Cream with a Sampan Rum Vieux Cellar Series 2018, Hội An, Vietnam

  • Freshly brewed coffee or a selection of quality teas
