Gastronomy: Topaz is all set to make your festive season extra special

The Topaz teams from Norodom and The Commune have been working hard to create amazing menus for Christmas and New Year's Day.

Christmas Eve and Christmas Day

Topaz offers an amazing five-course menu planned for Christmas Eve and Christmas Day (24 and 25 December)!

  • As an amuse-bouche, you'll be treated to a delightful trio of delicacies: a macaroon with foie gras, a fresh oyster with salmon eggs, and a caviar with a Baronne du Chatelard Crémant de Bourgogne NV, Burgundy, France.

  • For your first course, you'll enjoy a fresh duck liver, foie gras and lobster dish with a Louis Sipp Gewürztraminer 2018 from Alsace in France.

  • Now for the fish course, a blue lobster thermidor sauce with a touch of Gruyère, paired with the Baronne du Chatelard Cuvée Les Pierres Blanches Chardonnay 2020, Burgundy, 2024.

  • And now for the main event! Beef Wellington with Truffled Pursat Potato Purée with La Demoiselle de Sociando-Mallet 2016, Haut-Médoc, France

  • For the cheese, Walnut Salad with Blue Cheese with a Mas Amiel, Maury Vin Doux Naturel Vintage Réserve 2018, Languedoc-Roussillon, France

  • And finally, for dessert, the incredible Chestnut Mont Blanc with Spiced Chocolate Ganache paired with a Mas Amiel, Maury Vin Doux Naturel Vintage Réserve 2018, Languedoc-Roussillon, France.

The price for this is:

- USD130 for food only, add USD70 for the wine pairing or free flow of Crémant de Bourgogne

 

New Year's Eve and New Year's Day (31 December and 1 January)

  • A trio of sophisticated amuse-bouches that will delight your taste buds: a delicate tartelette with Pursat potato mousse and caviar, smoked salmon on a tender blini with a hint of sour cream, and a rich lobster bisque, lightly touched with cognac. To perfectly complement this exquisite meal: a Baronne du Chatelard Crémant de Bourgogne NV, Burgundy, France.

  • As for entrée, enjoy a steamed Kompot prawns served with a lobster coral sauce, accompanied by a medley of seasoned vegetables, and finished with a drizzle of white truffle oil and fennel emulsion, paired with a Saint - M Blanc by Château Saint-Maur, Côtes de Provence 2023, France

  • For the fish course, an exquisite turbot, served with a vibrant capers sauce that enhances the delicate flavour of the fish with Le Petit Chevalier Pessac-Léognan Blanc 2015, Bordeaux, France

  • For the main event! A mouth-watering Rossini-style Little Joe beef, topped with the most decadent foie gras, accompanied by a creamy macaroni gratin for a touch of indulgent comfort. And what wine to pair with this? none other than the Les Pélerins de Lafon-Rochet, Saint-Estèphe 2019, Bordeaux, France!

  • And now, for the cheese course: A light and airy soufflé showcasing the depth of blue cheese, served warm for a unique take on the cheese course, with a Promess de Rabaud-Promis 2012, Sauternes, France – a truly exquisite pairing!

  • For dessert, a beautifully caramelised tarte Tatin, Served with a rich and fragrant Madagascar vanilla cream and a Le Breuil 'Finition Sherry Oloroso' Single Malt Whisky, Normandy, France.
